One recent weekend, only three people were on duty at the Saucy Southerner in Southport during a busy Saturday shift.
Of the employees, one was sick and the other wanted the day off to attend her daughter’s graduation.
“I couldn’t tell her that she couldn’t go,” said Matt Thorne, owner of the restaurant. “She’s worked every other day I’ve asked of her.”
He opened at 503 N. Howe St. just a few months before the pandemic. At the time, he had a staff of 10.
“The most I’ve been able to get back up to is six,” he said. “We have five now, including me.”
