Against all the odds of 2020, chef Christian Manuel Ventura Alatorre saw a banner year with his plant-based sushi restaurant Sushi Momo, so much so that he opened two additional restaurants: The Mexican tortas of Nopalito and the Japanese-Mexican fusion of Casa Kaizen.
Now, the vegan chef is taking aim at a now-burgeoning market of plant-based burgers in Canada with Bvrger, slated to arrive in Old Montreal by mid-July. On the menu: Juicy plant-based burgers and fried vegan “chicken” that’s paired with fries and washed down with cold, oat milkshakes.
