Red & Blue Restaurants to launch French bistro Bouchon on former Rocket & Ruby site. Liverpool-based group Red & Blue Restaurants is to convert its Rocket & Ruby site on Castle Street and relaunch it as French bistro Bouchon. Set to open in mid-July, the relaunch will follow six-figure redevelopment of the site, and will create 30 new jobs according to the group.  Red & Blue Restaurants is owned by Paddy Smith and Jonathan Poole, the latter of whom also founded Mediterranean casual dining chain Ego, which operates 12 restaurants across the North West. Across Liverpool, Red & Blue also operates tapas bar Salt House; small-plates restaurant Bacaro; and Hanover Street Social brassiere and bar.
