For the past three weeks, Joachin Varela and his partner Maria Elena Betto have been working 12-hour days, every day, to make more than 2,500 empanadas to sell at the Byron Bay Bluesfest.

Using the traditional Argentinian recipe handed down from his grandmother, including her exacting technique of folding sealing and crimping the pastry - known as repulgue in Spanish - their company Holy Moly Artisan Empanadas was expecting to feed the hungry hordes at the five-day music fest.
