Una sala de 500 metros cuadrados con concepto 360 grados al estilo de Madrid, un restaurante-bar de dos plantas que busca regresar a las raíces, un grupo gastronómico que crece hacia los barrios, una gran terraza en un parque de la cercana localidad de Arroyo, la plaza de toros reconvertirá en un local de ocio. La hostelería parece que empieza a ver algo de luz al final del túnel. Al menos, esa sensación da por las aperturas realizadas estas últimas semanas y las próximas que vienen, y que buscan, ahora que está de moda la palabra, reinventarse.

Once upon a time, before there were COVID restrictions, there were taverns that served small bowls of snacks for its patrons. They were mostly in Wisconsin and Illinois, typically at establishments with limited natural light but ample Natural Light. This custom began as a means to skirt regulations by serving the bare minimum of food to allow for liquor service. Over time, tastes and logistics forced bars to shift from fare like onions to bologna sandwiches to peanuts and other shelf-stable goods, including what I refer to as pub mix.

One of the consequences of the longevity of the coronavirus pandemic is disruptions in supply chains. At the beginning of the pandemic, there were shortages of everyday necessities like toilet paper and cleaning products. As time went on, food shortages became a problem for some regions of the country. Now the supply chain is being blamed for a shortage of Chick-fil-A sauce.
The announcement by Chick-fil-A today that many of its 2,600 restaurants will be implementing a limit of one sauce packet per entree is likely causing some heartburn for its loyal customers. Chick-fil-A patrons love its special sauce. Fortunately, the company is not experiencing a shortage of chicken.
