Procedure:
The night before baking, mix the poolish and ferment 8 hours, covered tightly.
The day of baking, combine the flours and water, mix and autolyse, covered, for 15-60 minutes. Mix the yeast with the poolish and add to the autolysed dough for 5 minutes. The dough should clean the sides of a stand mixer. Sprinkle the salt on the dough and mix for another 2 minutes. The dough should be sticky but not gloppy.
Scrape the dough into a bowl 3 times its volume, cover and ferment for 2-3 hours, folding every 20 minutes for the first hour. Preheat the oven to 400F and prepare your steaming apparatus of choice. Scrape the dough onto your bench and preform it into a boule. Let it rest for 20-30 minutes to relax the dough, then form it into a batard.

But February (or January) winds have never gotten equal attention. Those, in my humble opinion, are worse than the bluster of March, especially because thereâs lower temperatures to contend with.
That, of course, leaves weather forecasters talking extensively through the coldest months about the âwind chill factor,â or how much colder than the actual thermometer readings our cold weather feels when the winds come relentlessly barreling in, generally from the northwest.
Wind messes with the outdoors, scattering things around like a tired toddler throwing a tantrum. After last weekâs 40-mile-per-hour assault for back-to-back days, you could count on trash cans scattered across the roadways in the nearby town, pieces of garbage bags flapping among the cornstalks up on the hill where theyâd snagged, and at least one empty birdseed bag tumbled into the first pond.

In a much-depleted and truncated pantomime season that withered on the vine, the National Theatre s debut production of
Dick Whittington lasted only four performances before the show was cancelled; it has now released this recording, which will be available throughout the current lockdown.
On the 23rd of December, the National Theatre moved its Dick Whittington Pantomime online for free, proving that not even the tightening of two more lockdowns can stop the love of panto filling the hearts of thousands this Christmas. The pantomime follows the classic Dick Whittington storyline of his journey to London and his election as Mayor though with plenty of modern twists. The panto itself does a wonderful job at displaying the rich diversity of London and the joy of Christmas theatre. Its feel-good soundtrack includes renditions of songs such as ‘I gotta feeling’ by The Black Eyed Peas, ‘Mr Brightside’ by The Killers, and ‘Fairytale of New York’ by The Pogues, as well as some more recent tracks like ‘Bad Guy’ by Billie Eilish, ‘Don’t start now’ by Dua Lipa, ‘Daisies’ by Katy Perry, and ‘Dynamite’ by BTS.
