“A thin, even layer is better than a thick one,” I repeat to myself as I gently run the back of a spoon across the fluffy round of dough to even out the gloopy paste. I mildly panic when some of it slowly runs onto the parchment paper and I leap dramatically across the kitchen for a paper towel to aid in clean up.
