Special to The Mail In the U.S. April 12th is National Grilled Cheese Day. Crispy bread and melted cheese, how can something so simple be so delicious?  This was my absolute favorite sandwich as a kid, the type of bread and cheese made no difference, although my Mom usually used American cheese on Wonder Bread. For me, this was the ultimate comfort food and paired with a bowl of hot soup I could dip it in, it was nirvana.  Confession time. Even though I have upgraded my taste in cheeses and bread, this is still my comfort food of choice. And if I am being perfectly honest, the very meltable American cheese is a hit. I do prefer a good sourdough or rye bread, but wheat will do as well.

Making a grilled cheese sandwich makes me feel stupid. I either end up with slightly warm cheese between slices of golden brown toasted bread or lovely gooey cheese encased in carbonite-black burnt toast. I can spend a day smoking a pork shoulder for pulled pork or make chocolate cake from scratch. Turn butter, bread and cheese into a grilled cheese sandwich? Not so much. Somewhere out there, there s a 10-year-old kid who could school me on this topic. Before seeking professional help (from a chef) I decided to try my recently purchased air fryer in hope of an easy fix. It proved itself a good option for frying fish, so I it deserved a crack making grilled cheese sandwiches. 

QDog Food Truck in Erath - Home Of the Beignet Burger

Ok, Acadiana, I have a new food truck you need to try. For some reason, a good food truck can just make a bad day a good one. QDog is a mobile food business in Erath located at The Grub Lot at 126 Old Railroad Road. Owner, Quinten Adcock, describes the food as an infusion of classic American with a Cajun flare. They’re biggest seller is their hamburgers. You can get a good ol’ American burger, or step out of the box and try the Beignet Burger. Yes, you read that correctly. The Beignet Burger is a 1/3 lb hamburger patty with Colby Jack cheese, smokey bacon, strawberry preserve sitting between beignets and topped with powdered sugar.
