Aromas of juicy, fresh summer strawberries and raspberries, granitic mineral, mushroomy, rich garden soil, and sun-dried wildflowers. The concentrated, high-voltage berry flavors continue on the palate, along with another healthy dose of crushed stone. Juicy body is kept in check by freshness, and the tannic structure from extended maceration is layered and chewy, yet inviting and wholly approachable. On the finish, meaty umami dances with dried rosemary and thyme, which linger seemingly all the way to the fruit from the next sip. I d drink this with grilled, smokey mushrooms and lamb chops and drizzled with excellent olive oil and herb-roasted summer vegetables, but it d be just at home alongside a holiday roast. 13%abv.

This is one of those wines that gives you something new every time you take a sip. It starts with yellow apple, Asian pear, and oily citrus peel. Then come the white flowers and honeysuckle. Next up, button mushrooms and crushed stone. The palate continues in the same style, starting lively and fresh, then transitioning gently to creamy and just slightly round, finishing with a pinch of sea salt. This wine begs for fish; I can close my eyes and taste sole with citrus beurre blanc. Soft cheese, too; something not too salty would be just right. At 12% alcohol, it plays the parts of both aperitif and entree equally well.
