With supermarket meat supplies strained, many consumers began buying directly from local farmers. “People just went crazy,” said Bill Tripp. “We’re booked up for all of next year already and people want to book up for 2022.” As a result, some farmers have considered starting slaughterhouses of their own. “All these guys who are raising their own, it’s their opportunity to sell it, make some money and finally get out of the hole they’re in as farmers,” said Tripp’s brother, Dean. “But there’s not enough time, cooler space and people to do the work.” The Tripps are well-versed in such issues as co-owners of the smokehouse, which their father, Bill Sr., started in rural Washington County in 1973.
