Who says that you can’t open a bar in downtown Denver a year into the pandemic? Not Hudson Hill and Lady Jane co-owner
Jake Soffes, who began welcoming locals into his newest spot,
the Wild, across the street from Union Station on February 16.
It’s a lovely bar, all light woods and green plants and luminous watercolor artwork from Denver painter Noelle Phares on the walls. Tucked away off a Wynkoop Street alley across the street from Next Door American Eatery, in what was formerly an Edward Jones Investments financial office, Soffes and Denver architecture firm Unum Collaborative worked together to transform the space into an urban oasis of sorts, complete with lots of natural light during the day and comfortable places to sit at any time
Portland’s whisky expert, Stuart MacLean Ramsay, is back and ready to host his
Ramsay Dram Whisky Classes but this spring classes will be held virtually on Sunday and Wednesday. Normally Ramsay hosts these classes in an intimate setting in his living room but due to the pandemic he is taking the classes to Zoom!
Ramsay has a storied history in Portland’s libation scene as he moved to the Rose City to open and manage the now defunct BridgePort Brewpub in 1986. He is also a well-known and regarded spirits expert, teacher, and writer for multiple publications. He brings decades of research to his Ramsay’s Dram Whisky Classes, ones that are very enjoyable to attend.
Two decades into America’s historic bourbon boom and the category continues to evolve with no signs of slowing.
As heritage distilleries experiment with enjoyable new expressions, the number and quality of craft producers only continue to grow. While there’s no disputing Kentucky’s status as the spirit’s heartland, with production taking place in all 50 states, it’s by no means the only source of fine bourbon.
This tasting for VinePair’s annual roundup of America’s native spirit included dozens of bottles and offered no shortage of pleasant surprises. For the final list, we limited inclusion to one bottle per brand and have shared average prices based on online data (because price gouging, unfortunately, is alive and well).

Sazerac-owned Eagle Rare Bourbon has awarded US$50,000 to on-trade charity Off Their Plate to help feed local communities during the pandemic.
Off Their Plate founder Natalie Guo has been awarded the Eagle Rare Life Award
Founded by Natalie Guo, Off Their Plate partners with bars and restaurants to feed vulnerable people in the local area.
The non-profit organisation has been awarded the 2021 Eagle Rare Life Award, which donates US$50,000 to an individual or organisation that ‘finds ways to reach higher in fulfilling their American dream’.
Guo was born in China and immigrated to the US from Sweden as a child. She responded to the Covid-19 pandemic by creating a charity that both revives on-trade venues struggling with restrictions, and feeds healthcare workers and community members in need.
