Meanwhile, 93% of operators say recruiting and retaining employees will likely be more difficult after the pandemic is over compared to business before the pandemic.
“It’s a real concern, especially when you combine it with the losses the industry saw last year,” said Kelsey Streufert with the Texas Restaurant Association. “We have rising food and other commodity prices we’re dealing with as well. So, it’s another really significant challenge at a time when we need to be rebuilding and kind of ramping up to make up for the last year.”
Local restaurants are still having to close earlier than normal or only open on certain days because they simply don’t have the staff.
Even before the pandemic, the service industry was in need of reform. As restaurants begin to open to full capacity, owners and managers are having trouble finding servers, bartenders and other key players. With stimulus packages and unemployment checks, furloughed workers of the service industry were practically guaranteed biweekly payments of a set amount. Many workers found it allowed them to pursue other job opportunities, and even better, not have their livelihoods depend on customer tips.
Callie Dee is one of Dallas’ most sought-out artist managers, but before the pandemic, she was a bartender at a Saginaw dive bar. She was furloughed immediately when COVID ordered restaurants closed. When the bar began to bring people back on, Dee chose not to return and instead focused on her work in the local music industry.
Ellen’s is booming, with restaurants opening in Frisco, Fort Worth, East Dallas and in the former Crossroads Diner
The company is also working on new restaurants or bars in Keller, Dallas and Frisco.

Comfort-food restaurant Ellen’s is undergoing a significant expansion in 2021. What started as a tiny eatery in the West End in 2012 has blossomed into a larger West End restaurant, a new place in Allen and four more coming-soon Ellen’s Restaurants in Dallas-Fort Worth.
