Itâs always a difficult balancing act for bars and restaurants to figure out what to do with the stores of severely allocated rare whiskeys that they receive over the course of the year. Some spots price them so high that only the biggest ballers will have the wherewithal to try them, while others put more reasonable prices on their special pours, meaning that one table of expense-accounters can run through a whole bottle of Pappy in one night. This also minimizes the potential profit for the restaurant while eliminating the opportunity for some of their regulars to discover a real treat.
