DURHAM – When Wildcat Pizza at 3 Madbury Road closes its doors for the night at 8 p.m., a new takeout and delivery-based restaurant will operate onsite during the overnight hours.
Seven University of New Hampshire seniors started a late night ghost kitchen out of Wildcat Pizza. Fry’d is a late-night comfort food kitchen, inspired by the the lack of late night vegan and gluten-free food options in the area.
Twenty-one-year-old Darren Gibadlo of Hampton is the CEO and mastermind behind the restaurant. Gibadlo said his experience of working as a line cook since age 15 at places like Al s Seafood in Hampton, Local Kitchen in Kittery and The Farm Bar and Grille in Dover, made him want to own and operate his own restaurant business. As someone who struggled to find gluten free options in town for himself, he saw it as a big opportunity.
