Johnson says there are two major issues when it comes to meat processing in the U.S. – transparency and capacity. He says businesses, such as Wall Meat, are good examples of how the country can increase capacity by processing locally. “Federal inspection is not the easiest thing in the world to come by. You’ve got some states like South Dakota where we have processes that are equal to or better than what we see at the federal level,” Johnson said. “We want to give those folks, you know people who are inspected like Wall Meats, even that much more of an opportunity to be able to sell into the stream of commerce. That’s going to give them that much more hope and belief that they’re going to have a business case to expand.”

The goal is, once the program is developed and receives all necessary approvals, to begin courses in 2022.

KNBN NewsCenter1 February 24, 2021 RAPID CITY, S.D. Western Dakota Tech has a new partnership with Wall Meat, and the benefits are expected to reach far beyond the classroom. In April 2020, Wall Meats reached out to Western Dakota Tech to start a meat processing course, and the collaboration was approved by the WDT board of trustees this month. “This gives ranchers a better price for their meat and a more stable market,” said President of WDT, Ann Bolman. “It also gives consumers a better opportunity for good quality meat at a price that they can afford. And for producers in the middle, it gives lots career opportunities.”
