The proliferation of kombucha companies based in the Lone Star state suggests its residents have another favored libation now. For those unfamiliar with this elixir, kombucha is a fermented tea with a tangy, slightly sparkly mouthfeel with marginal amounts of alcohol and caffeine.
Though denizens of Russia and Manchuria have been producing kombucha for hundreds of years from well-tended Symbiotic Cultures Of Bacteria and Yeast (a.k.a. SCOBY), the beverage has come into relatively recent popularity in the United States.
