Russ Hilliard says it takes nearly two years, sometimes even more, to grow an oyster from seed at his aquatic farm in Hampton Harbor. Once grown, the majority of his tasty crop is either sold to local restaurants, or directly to customers at his retail store on the beach, which he runs with his business partner, Conor Walsh.
A select few of the succulent mollusks, however, have been finding their way up the road to Newington, where they have been thrown right into the boil at Stoneface Brewing much to the glee of beer aficionados throughout the Seacoast.
“That’s a Swell Stout,” a velvety dark oyster stout, and the second collaboration between Swell Oyster Co. and the popular Newington brewery, made its debut earlier this winter and has proven that oysters can be just as tasty out of a pint glass as they are on the half shell.
