Cakes. Cookies. Brownies. Pastry. They all start out more or less the same way flour, butter, sugar, eggs give or take a few ingredients, depending on the recipe. And often, mastering perfectly textured springy cake or supremely chewy-crisp cookies is more about baking technique than it is about ingredients. But recently, I learned that there is a single ingredient that can make almost every baked good better: milk powder.
