Before Tokyo, Kyoto was Japan’s capital, a title it held between the years of 794 and 1869. It is also often referred to as the country’s cultural capital. It is home to 41 sake breweries, 22 of which are in the Fushimi district where the Matsuo Taisha shrine, built in 701AD to acknowledge a deity that is considered to be the god of sake, is located. Fushimi has a history of sake brewing dating back to the 14
