1/2 pound shredded Swiss or Gruyere cheese

Preparation
Shuck the oysters and make sure they are free of any shell matter, retaining as much liquor as possible. Carefully place them on a sheet pan and pop them in the freezer.
Render the bacon on low heat in a sauté pan and drain out a decent amount of fat, then add butter, shallots, and garlic. Increase heat to medium and sauté until just starting to brown. Deglaze with Pernod or Sambuca. Pour the sauce over half the spinach and toss.

I enjoyed Scott Crain’s oyster Rockefeller recipe so much that I decided to make a spinoff of it for another classic shellfish recipe, clams casino. I really like the touch of Sambuca, which sweetens these up a bit, and the lemon butter cracker crumble really puts them over the top.
Ingredients
1/2 cup linguica, diced
3 tablespoons garlic, diced
1/2 cup Gruyere cheese, diced
3 tablespoons olive oil

If Washington’s extended ban on evictions expires at the end of March, 46-year-old Antonio Salazar could potentially lose his housing.
Salazar, a native of Mexico and 20-year resident of Redmond, worked as a chef until a few years ago when he suffered an accident that required spinal surgery. His only source of income had been workers’ compensation, which he said the state terminated a year ago, just before the pandemic set in.
