This dish is similar to the best-loved baked pastas, in that it’s deeply savory and somewhat indulgent, but here, thin crêpes (crespelle) replace the traditional noodles. A seared sausage and wilted Swiss chard filling is loosely bound together with silky béchamel sauce and topped with grated Parmigiano-Reggiano, creating a harmony of comforting flavors. The crêpes in this recipe are a fun change of pace, as their exterior turns crispy while their interiors sponge up any excess sauce, creating an enjoyable contrast of texture. The crêpes, the filling, and the sauce can all be made ahead of time, so although this recipe is somewhat of a project, you can cook at your own pace and minimize stress by prepping some or all of the components ahead of time.
