Starting in March, get ready for banana daiquiris, blue Hawaiians and Mexican rum mojitos. A new cocktail bar housed inside a shiny silver Airstream is set to roll into downtown Phoenix.
Valley beverage experts Colton Brock, Tyka Cheng and John Sagasta are teaming up to bring the new bar, named Baby Boy, to The Pemberton. The camper will park alongside other food trucks and trailers at the local business complex popping up in the yard surrounding a historic house on Second Street.
The Pemberton also includes the new location of Film Bar, where customers can view movies at an outdoor theater. Other trucks and trailers in varying stages of opening on the property include Saint Pasta, Dino s Napoletana pizza and others.
More than a dozen businesses will set up shop inside The Pemberton PHX, as it will be called, according to a December 10 announcement sent to
Phoenix New Times, which describes the project as “a new outdoor playground.” It s set to open in January.
The collective includes several culinary partners, including Bitch on the Run (Breakfast Bitch Express), Dino’s Pizza Napoletana (the operation that used to be behind Thunderbird Lounge and Restaurant Progress), and Saint Pasta (the Italian eatery that used to operate out of Linger Longer Lounge).
