Now the season for British asparagus is upon us (and hooray for that), the question of which wine to match with it arises. This is considered a thorny issue by some, who put asparagus in the category of “difficult food with wine”, alongside artichokes, pickles, smoked mackerel and so on.
They mustn’t. True, red wines are best avoided, as they clash with that green sappy flavour, but once you exclude those, there are some truly blissful marriages to be made. The rule of thumb is to pick dry, crisp but fairly fruity, unoaked whites.
