On the season finale of
“Top Chef: Portland,” the remaining three chefs Dawn Burrell, Shota Nakajima and Gabe Erales were tasked with preparing, as host, judge and executive producer Padma Lakshmi put it, “the best four-course progressive meal of your lives.”
Burrell, the Houston-based chef who has impressed all season with her grasp of West African and Southern American cuisine, created an ambitious menu of lamb tartare with tomato and celery salad, beef tendon puff and rice honey bread; green gumbo with seafood and fermented rice fritter ( an homage to the late New Orleans chef Leah Chase‘s gumbo z’herbes); braised beef cheek with black-eyed peas and buttered turnips; and yam bread pudding with butter pecan anglaise and apple compote.

Top Chef challenges, none is more revered and feared among the contestants than Restaurant Wars. However, the stakes were even higher for the two teams in Season 18, who, instead of executing two pop-up restaurant concepts as usual, were tasked with serving the judges a seven-course tasting menu at each of their respective chef s tables due to the coronavirus (COVID-19) pandemic.
What didn t change was the fact that one chef still had to go home at the end of the Elimination Challenge. That was unfortunately Sara Hauman. Although the judges enjoyed her crispy salmon skin with pak choi, turnips, and hazelnut brown butter sauce, they weren t as big of fans of her other dish, a halibut crudo with ajo blanco sauce and confit green tomato.
It s Restaurant Wars week, and chef Burrell gets in some hot (ham) water.

We re keeping our eyes glued on Dawn Burrell (who s soon to open Late August) and Sasha Grumman (who has a great focaccia hustle) as they battle each week (Thursday nights on Bravo).
