During our visit with Northfield Chamber of Commerce and Tourism officials at Professional Pride Realty in Northfield today we talked about foods we ve eaten as kids when it was hot.
For example Radish Sandwiches were popular when I was a kid. Chamber Membership and Events Coordinator Jane Bartho said she was embarrassed to admit she had them and loved them when she was young. Why embarrassed ? I asked. I don t know it just sounds strange now. Pete Mergens of Professional Pride Realty could not join us on the program but did listen during that segment and texted, Ish.radishes to Chamber President/CEO Lisa Peterson.
For those of you who have followed this column over the years, you’ll know that asparagus soup is one of my favourites. If you enjoy it too, you’ll be happy to know I’ve simmered up another tasty version of it that’s not difficult to prepare. Start by slicing some asparagus spears and putting them in a pot with stock and cubed, peeled potatoes, the latter of which helps to thicken the soup. Simmer them for a while, and then add some frozen or freshly shucked peas and sliced green onions to the pot. Simmer the soup a bit longer, until the potatoes are tender, and then add some chopped fresh tarragon (you could also use dill).
