Josie’s Table, the farm-to-table restaurant that is replacing the former
Provence Restaurant & Wine Bar in Stuyvesant Plaza in Guilderland, is eyeing a spring opening. Owner Daniel Darves-Bornoz closed the 21-year-old Provence, long a destination for French and Mediterranean fare, last March at the beginning of the pandemic and decided to change the name and concept. He tells me he plans to hold off on debuting the new venture until warmer weather makes outdoor seating possible and more people will have received the coronavirus vaccine.
Darves-Bornoz says the name is in honor of his mother, Josephine, who was inspired by the family’s home garden in Hague, Warren County. He says Josie’s will feature local, organic and seasonal ingredients for a menu of farm-to-table cuisine. Darves-Bornoz’s son Peter, a graduate of the Culinary Institute of America, will be the head chef. The ba
