Rory O Connell is back with another two-part Christmas special, airing over two nights, this week.
As well as co-founding the Ballymaloe cookery school with his sister Darina Allen, Rory is one of Ireland’s best loved chefs, and his talents truly shine over the festive season. The dishes I am going to cook today are ideal, I think, for the period immediately after Christmas, when things are less frantic and when, hopefully, you will have a little time if not for a zen moment in the kitchen, then at least some time to appreciate the joy of food, says Rory.
