valentine s day around the corner. i m clueless right now. what do i do. pasta with pancheta, pickled peppers, parmesan and parsley. it is to die for. i m still going to have a boyfriend after this. he ll put a ring on it. i guarantee you. what? let s do it. get a big pot of water and bring it to a boil because that takes the longest. then work on pancheta. it is italian bacon but not smoked. big skillet with high sides, olive oil not a lot because the pancheta renders a lot of fat. as you can see, it almost looks like salami. like prosciutto. it is deeply salty, which i love. chop in to bite-size pieces and add to the skillet. about a half cup there. about a half cup. it will brown up quickly and get out natural fat.
