As the first of its kind in one of the major tourist cities in the Philippines, PAPA BOLO is set to be the next big thing in the country. The brewpub’s establishment marks a milestone in the history of the well-loved and often-visited city of Tagaytay.
Directly translated as “Father Knife”, this moniker is a twist on the Filipino term “Taga, Itay,” from which Tagaytay city gets its name. It’s meant as a term of endearment that suggests warmth and affection. Along with this, Papa Bolo conjures visions of the humid countryside; of afternoons in the sun, pine trees swaying in the brisk wind, with a cold drink in hand.
