New Columbia restaurant Ozark Mountain Biscuit and Bar opens Thursday

Bryan Maness is ready to officially open the doors on Ozark Mountain Biscuit and Bar.  While Maness did not plan to start out in the restaurant and food industry, once he was, the end goal was opening his own brick-and-mortar location.  Ozark Mountain Biscuit Food Truck was developed with the help of his brother, Brent, and uncle, Michael. Maness brother and uncle are partners in the restaurant, but do not live in Columbia. They have been here ahead of the opening. Maness is the managing partner. Origins of the business Going from conducting business out of a food truck to a restaurant in the Arcade District area of Fay Street took several years and it started on the music festival circuit in 2013.

Ozark Mountain Biscuit Co is putting down roots in Columbia

Ozark Mountain Biscuit Co. is building a permanent home in Columbia, Missouri. This summer, the food truck famed for its buttery, Southern-style biscuit sandwiches will open Ozark Mountain Biscuit and Bar, featuring both a substantial all-day menu and a sprawling patio, across from Logboat Brewing Co. A brick-and-mortar concept has been in the works since the company’s inception, but the COVID-19 pandemic – and a nonexistent festival season – pushed chef-owner Bryan Maness to make the move. “It was in our original plan to eventually open a restaurant, but what kind of form that would take, we didn’t really know seven years ago,” he says. “So we started with a food truck – and things were going well – and then we got into the festival scene and kind of focused on that for the last few years.
