An essential dimension to a memorable trip is the kai we eat along the way. With our travels hermetically confined to our own shores for the past 12 months, it’s staggering just how many signature treats and iconic tastes burst forth from every pocket of New Zealand. Some star specimens have cultivated such runaway fame, their folklore-like status lords over their location like a landmark on a plate. Exhibit A - Fergburger in Queenstown. Aotearoa doesn t really go in for terroir . Spoilt for choice by world-class food producers, we are not so precious about the provenance of a particular meal. However, as travellers there s something to be said for eating the right meal in the perfect place.
