A FOOD trailer is bringing far-eastern inspired desserts to East Lancashire. Carmen Chan’s Darwen-based dessert trailer Amai takes inspiration from China, Hong Kong, Taiwan and Japan among others in its sweet range. Sweet tooths usually love the traditional bubble waffle originating from Hong Kong and Taiwan’s frozen ice cones, which have lots of fluffy ice cream shavings. Amai translated from Japanese means sweet experience and it was started as a door-to-door business by Miss Chan two years ago, before she bought a trailer to go to events with. But the pandemic meant she could not fully get going and for now, the 29-year-old is stuck delivering her treats in Blackburn and Darwen.
