I’ll be honest with you, the information in this story had to overcome a lot of my previous prejudices, most of which were unfounded. First off, you’ll notice I don’t write too often here about Cinco de Mayo events or other holidays that have been appropriated into drunkfests for the masses. Secondly, until about a year ago, I thought kombucha was something I would never like. In a world that already had plenty of beverages, why would I need moldy tea?
However, I was incorrect. As my palate has changed through the years, I’ve become a real fan of slightly funky and tart flavors from embracing kimchi (not literally, that would be messy) to drinking acidic shrubs and cocktails with vinegar in them. So, y’know, you grow.
