Purple sprouting broccoli, henceforth referred to as PSB, is one of the food joys that February brings. It’s a long stemmed variety with deep purple hued florets. Its packed with flavour and easy to cook. Plunge into boiling salted water and drain. Cook some finely sliced garlic in oil and add the broccoli, cooking until slightly scorched. Alternatively toss in oil and season with salt before roasting in a hot oven for about 10 minutes.
