What to plant now, and more importantly what not to plant just yet

Let’s stick with the vegetable garden for now. And let’s start with seeds.
Seeds germinate based on the soil temperature at seed level. With recent very warm weather in the past few days, soil temperatures have warmed into the 50s. Some seeds will germinate in those soil temperatures, and some seeds will just sit there and rot.
The seeds that can germinate okay in cooler soil are beets, radishes, spinach, Swiss chard, leaf lettuce, peas, collards greens, kale(yuck), kohlrabi(yummy), leeks, onions, parsley and turnips. Carrots may germinate in this soil temperature also. Any of these seeds should be able to handle a frosty morning or two after they germinate. If we do get a very cold night in the mid-20s yet in April, you might want to cover even these plants. Right now I don’t see a 25 degree morning in the next two weeks.
