“The olive tree is surely the richest gift of heaven,” former American President Thomas Jefferson once proclaimed, and Marlborough olive growers Janine Mayson and Mandy Oyston fully agree. The pair are committee members of an olive-growers co-operative which operates Marlborough s only commercial olive press. They say homegrown freshly pressed oil is incomparable to any available on the supermarket shelves. “People who have olive trees on their properties should utilise them, because the oil is fabulous,” said Mayson.
