Banksii Vermouth Bar & Bistro to close at the end of May

Rebecca Lines and Hamish Ingham s Banksii Vermouth Bar & Bistro will shut at the end of May, after nearly five years of trading.
It won t be the end of their association with the Barangaroo site, however.
The duo are set to join Sydney s Mexican wave, with plans to open Tequila Daisy in the Banksii space. Banksii has enabled us to invite Sydneysiders to . develop an understanding and appreciation of the aromatic flavours of vermouth, says Lines, co-founder and sommelier of Banksii. The last 12 months have given us the freedom to experiment and explore our obsession with Mexican-inspired flavours. We re excited to be able to share what we ve been working on with the opening of Tequila Daisy in August.
