If you had told Kristin Colazas-Rodriguez five years ago that she would one day become a major player in the Long Beach bread scene, she probably would ve rolled her eyes and shrugged it off.
After earning a bachelor s degree in history and economics from Cal State Long Beach, she spent three years working as a pastry cook, sous chef and bread baker, first in Los Angeles then in the San Francisco fine-dining world. The experiences were a crash course in the highs and lows of the restaurant business.

The pop-up, which starts at noon and lasts until supplies run out, was conceived by Rodriguez as a way to uplift food and beverage industry workers during the pandemic.
“Food brings up morale and brings people together,” Rodriguez said.
Guests can choose from a plate with three tacos (choice of beef birria, pork carnitas, chorizo, or cauliflower chorizo), multias, tortas or papas gordas (potato confit). Rodriguez will also have a selection of six handmade salsas including salsa roja (red), tatemada, negra, and verde (green).
The papas gordas made of potato confit, caramelized onions, chipotle aioli, salsa negra and carnitas mixta will be available to order at Friday’s pop-up in-front of Alex’s Bar. Image courtesy Eddie Rodriguez.
