Karl Cantrelle Jr. and his wife Charity Cantrelle bring Cajun culture and cuisine to the Great White North with their restaurant, Southern Roots, in Dalmeny, Saskatchewan.
Karl, who hails from Bayou Blue, said the restaurant is modelled after the culture of his hometown. The walls are lined with trawling nets, the radio blares swamp pop and meals are served in the traditional ways Karl grew up with. Asked if his potato salad was with or without mustard, he assured it was with.
