Sometimes, the secret to business is filling a need customers never knew they had.
When 21-year-old Liz Diaz transferred to the University of Florida last fall, she quickly noticed that while students at Auburn University were crazy for charcuterie board boxes, no one was onto that trend in Gainesville.
Diaz, a baker since she was 6 years old, beat everyone to the punch.
At the start of her first semester at UF as a plant science major, she opened The Box Gainesville a business that sells boxed charcuterie boards and homemade desserts.
“I saw that no one else in Gainesville offered this service and decided to take action,” said the entrepreneur, full-time student and Chick-fil-A employee.

From fighting fires to igniting them, Rae Crandall, fire ecologist and assistant professor of fire ecology at the University of Florida, will be featured on the CBS series “Mission Unstoppable.”
Crandall sparked her passion for fire ecology after participating in a prescribed burn during her undergraduate career at Indiana’s Butler University.
“I actually got to light the fire and watch it burn,” said Crandall. “But it was even more interesting to walk by that prairie every day and watch everything resprout.”
Crandall worked briefly as a wildland firefighter after college but discovered that fires were important for regeneration within ecosystems. She went back to school, earning her master’s in botany and a doctorate in biology.
Cold temperatures will set in Thursday night, dropping as low as 34 degrees and continuing into Friday morning with an expected high of 49.
Friday night s predicted low will be a hard freeze, weather service officials said. Throughout all of North Florida, temperatures are expected to drop to the mid- to upper 20s.
The city of Gainesville has opened cold-weather shelters due to the expected drop in temperatures. Downtown s St. Francis House shelter is mostly intended for families with children, while Grace Marketplace is meant for adults.
Any time there is a hard-freeze warning, residents are urged to bring in pets and cover plants, especially those that are young and vulnerable. Only safe heat sources should be used indoors. If you use space heaters, be sure to follow the instructions and don t leave it unattended.
“I know people from back home, who are around the same age, who have died from COVID,” Amber Lewis said. “We know people … who are dead.”
Banks has Alzheimer s but beyond her age, had no other pre-existing health conditions. Amber Lewis is immune compromised with a thyroid condition while Joe Lewis has an irregular heartbeat.
Banks’ positive result shook the couple.
“For me this was a death sentence because of what coronavirus is,” Amber Lewis said.
Amber Lewis said she fretted over how she might keep her mother-in-law safe.
“Even though Viola has Alzheimer’s she has some clarity,” Amber Lewis said. “I was stressed how I was going to keep her in the room because Alzheimer’s people wander.”
