Those in the industry say last weekâs decision will benefit the hundreds of boutique breweries and distilleries that dot the landscape, particularly in regional areas. But while it will allow them to employ people, buy more kit and enter the market, the industry says it will unlikely bring down prices.
Jon Lark, founder and brand ambassador for Lark Distillery in Tasmania and the former head of the Ada, says the decision was more about making it easier to start up a new business or grow an existing one.
âItâs the one thing thatâs held our industry back from growing more than it has done until now,â Lark says. âThere was a distiller in South Australia who was addressing a group of people, saying I just wanted you to know that I got an order from one of the big liquor companies, and I turned them down.

Australia s Lark Distillery Offers Up High End Rare Cask PARA100 Whisky
Australia’s Lark Distillery Offers Up High End Rare Cask PARA100 Whisky
Australia-based Lark Distillery recently announced a new addition to its Rare Cask Series, PARA100 (56.3% ABV).
The single malt release has been finished in casks that once held 100-year-old Seppeltsfield Para Vintage Tawny, believed to be the world’s only unbroken lineage of single vintage wines spanning more than 130 consecutive vintages. Before spending its time in the unique cask, the spirit spent roughly five years hopping between ex-Port, ex-Sherry and ex-Bourbon casks.
Official tasting notes describe a nose that is rich and sticky, with hints of treacle pudding, brandied custard and wood-fired raisin brad, that lead into a sweet cherry and oak with undertones of saddle leather and fresh tobacco on the palate. A long finish of cocoa nibs, coffee, blackberry jam and dark fruit cake complete the bottling.
