For all the challenges posed by 2020 – many businesses traded for as few of four of the last twelve months – it was the country house hotel’s season in the sun. Their unique package of world-class luxury and acre after acre of safe open space could not have been more attractive: it’s pretty easy to socially distance when there’s a croquet lawn and a topiary swan between you and the next guest. “The staycation saved the country house hotel,” says Michael Caines, chef patron of Lympstone Manor in Devon. “It looks like it’s going to be the buzzword of the year again.”
Luxury hotel operator Exclusive Collection will open to ‘hyper-local’ restaurants this spring - Hillfield Restaurant & Bar and The Wellhouse - at its Pennyhill Park and Lainston House venues
Hillfield Restaurant & Bar at Pennyhill Park in Bagshot is named after the earliest historic reference to the land, ‘Pennyhillfield’ and is described as being ‘an ode to Surrey produce’ with a ‘farm to fork, nose to tail’ philosophy.
Heading up the kitchen will be chef Lewis Russell who has created a British brasserie-style menu.
Located in the five-star luxury resort it will sit alongside the hotel’s Michelin starred restaurant Latymer as a more casual destination. Menu items will include include local beef short rib arancini; venison wellington; and Hillfield hot pot. There will also be a daily ‘Surrey Grill’ specials board, weekend brunches and traditional Sunday roast platters.
