It’s not about achieving a badge of authenticity. It’s more of an emotional thing for Ernesto Vélez, owner of the Havana Cafe in Casa Linda, to source the right cheese, the right bread, to slow-simmer the pork in the cauldron of sofrito. Cooking with the right ingredients not the ones you feel like you must cook with, but the ones that make you feel something is one way Vélez keeps his heart and soul connected to his home of Holguín, Cuba.
Khao Owner Makes Another Pivot
The Dallas Morning News reports he will open in Khao Gang in the same location at 4812 Bryan St. No. 101 in East Dallas, serving curries and soups, takeout only.

Khao Noodle Shop Make Its Next Move
In the name of survival, Donny Sirisavath temporarily closed Khao Noodle Shop earlier this month for some “time apart to see if this is the right place for us, or to determine if we have to move on.” Now
Dallas Morning News reports that Sirisavath’s Old East Dallas restaurant will open Khao Gang, a to-go restaurant, in February. It will operate out of the same noodle shop space, but will serve curries, soups, and stews for takeout only.
