Hi everyone, I hope that you are all keeping well and in good form. I never thought I would turn into one of those people that keeps talking about the weather but I can feel it happening! Therefore, to attempt to combat me talking about the lack of continuous sunshine I have decided to bring the sun to you, albeit in a gastronomic way and suggest this take on the Spanish classic as this week’s recipe. This is a really versatile dish that can be served at any time of day. It’s perfect for brunch item and I often prepare it with the mornings supply of eggs from the hens. For something with so few ingredients, it can be surprisingly tricky to make so give yourself a dry run before serving it up to your mother in law for a special family brunch! It just needs a bit of time! Anyway I hope that you enjoy it and I will be back with another super recipe for you next week again.
