Degust, his newly opened tasting menu restaurant in Spring Branch. Silva brings a wealth of experience to the project, having worked locally at restaurants such as Uchi, Pesce, and Brasserie 19 as well as staged at restaurants in Chicago and Copenhagen. Silva draws on his Spanish and Mexican heritage to create Degust s eight-course tasting menu. For example, some courses utilize corn that s ground in-house and put through a traditional nixtamalization process to create masa that becomes tortillas, tostadas, and quesadillas. Many dishes use vegetables and herbs grown either on-site or at the restaurant s urban farm in The Heights.

To help him chronicle the highs and lows of 2020, he s joined by three of his regular co-hosts: Matt Harris, Linda Salinas, and Felice Sloan. The conversation begins with Sandler asking the panelists for their favorite new restaurants of the year. Bludorn, the French-influenced restaurant from former Cafe Boulud executive chef Aaron Bludorn, quickly emerges as the consensus pick. However, both Sloan and Salinas note that it was the established restaurants they supported throughout the year places like Candente, Pondicheri, Paulie s, and Dish Society that defined their year in dining.

Click Virtual Food Hall. Medina begins the conversation by recounting the career path that took him from the Houston Country Club to Kata Robata, Soma Sushi, and acclaimed Tokyo restaurant Narisawa. Together with his business partner Steven Salazar, Medina opened Click in 2019. The venue operates over a dozen concepts that serve pizza, tacos, poke, Japanese curry bowls, Filipino food, and more from one kitchen and one ordering platform. Recently, it expanded by partnering with two existing restaurants, burger-chan and Ninja Ramen, to serve their dishes, too. Sandler asks the chef why he chose to partner with those two businesses.
