Николай Станчев е роден на 1 август 1961 в гр. Пловдив. Завършва ВИТИЗ през 1984г. в класа на проф. Гриша Островски.
От 1984 до 1987 г. играе по разпределение в МДТ „К. Кисимов“ – В. Търново, а в периода 1987-1991 е актьор в Драматичен театър – Пловдив. От 1991 е актьор на свободна практика. В периода от 1991 до 1994 г. играе в частната трупа на Малък градски театър – Пловдив.
