Chicken and waffles go beyond brunch, get creative

GRAND RAPIDS, MI - When the Ashville, N.C.-based Southern scratch kitchen Tupelo Honey opened its first Michigan location in September of 2020, executive chef Eric Gabrynowicz said brunch was a huge focus.
“We thrive on eggs, mimosas and Bloody Marys, and having a good time,” he said. “It’s what we live for on the weekends.”
But he didn’t mention the trendy, hipster brunch favorite of chicken and waffles as being on the menu.
In fact, since opening in 2000 and expanding its Southern cuisine menu to 16 locations throughout the country, including Grand Rapids, chicken and waffles have never been on the menu at Tupelo Honey.
