Darina Allen is keeping her head up despite the fact that the ongoing health crisis has dealt a real blow to the finances of the Ballymaloe Cookery School.
The much-loved Irish chef recently defended the decision to hold in-person classes after it had emerged that eight students from America, The Netherlands and the UK attended the school while the country was still in Level 5 lockdown.
The Laois food writer has revealed that the acclaimed cookery school, which is based in Shanagarry in Co Cork, recorded losses of €193,097 in 2020, with the establishment employing 57 staff in total.
This year has thrown up unique challenges for people and businesses alike, and despite grappling with losses in revenue, Darina is maintaining a positive outlook and pushing on forward.
