It’s not that difficult for Beth Hodge to sell the pudding made from the milk of her Jersey and Milking Shorthorn cows. Who doesn’t like pudding? But Hodge also produces a product that is a tougher sell — freezer lamb. Fewer people simply want to buy lamb compared to chicken, pork or beef. Hodge, owner of Echo Farm Puddings in Hinsdale, New Hampshire, needed to get creative, as she explained Feb. 4 during the New England Women in Livestock Business virtual winter conference. The biggest challenge for Hodge is to get people to taste lamb. She’s found that farmers markets are a useful forum for offering samples. Once potential customers taste the meat, they usually buy.
