We, in San Antonio, love tacos (it is known).
It can be bean and cheese, potato and egg, bacon and egg, chorizo and beans, and any other combination you can imagine. However, we absolutely love barbacoa (yes, we know what s in it, and we still eat it proudly).
We enjoy it so much that there is a festival every year that focuses on the Mexican dish, called the Barbacoa & Big Red Festival. It typically occurs in May, but sadly the coronavirus pandemic canceled it for the second year in a row.
